ChioShin May Pastry Workshop × Morihide Yoshida

Back to list

From winning two consecutive championships in Japan’s TV Champion 2 pastry competition, to claiming back-to-back overall titles in the French professional pastry competition Le Meilleur Pâtissier: Les Professionnels, Chef Yoshida is one of the few Japanese pastry chefs to have earned lasting recognition on the French professional pastry stage.

Since opening MORI YOSHIDA in Paris in 2013, he has established a distinctive identity in the Paris pastry scene through creations defined by purity, precision, and exceptional refinement.

✨ Reimagining the Classic French Flan
Chef Yoshida’s interpretation of the classic French Flan has brought new contemporary relevance to this timeless pastry.
His boutique has been featured by L’Express as one of Paris’s notable pastry destinations, and has also been recognized by Fou de Pâtisserie, one of France’s leading pastry magazines.

At Paris’s Flan Festival, where some of the city’s finest flans are showcased, his flan has repeatedly sold out by the morning, gaining strong attention and becoming one of the shop’s most recognizable signature creations.

👨‍🍳 Rather than relying on elaborate decoration, Chef Yoshida’s work returns to the essence of pastry itself —
the purity of ingredients, the precision of proportion, and the clarity of flavor balance.

Behind the apparent simplicity of his creations lies an almost architectural discipline in texture, aroma, sweetness, acidity, and temperature.
It is this level of rigor and refinement that continues to set him apart in the Paris pastry world.

👨‍🍳 At the end of 2024, MORI YOSHIDA Tokyo officially opened, extending the philosophy of the Paris boutique.
Faithful to French pastry tradition while expressing Chef Yoshida’s signature eye for detail, the Tokyo store has already drawn attention for creations such as its Mont Blanc.

In this workshop, 🐨 participants will explore Chef Yoshida’s approach to French pastry through his perspectives on technique, flavor construction, proportion, and creative logic, offering a deeper understanding of how Japanese craftsmanship can illuminate the core values of French pastry.
