What happens when Hong Kong-style "Yuenyeung" tea meets a mixologist’s interpretation?
Back to listThe signature cocktail from BAR MASTERS, "Café Revival," is inspired by Hong Kong-style Yuenyeung (coffee with tea). It blends (Earl Grey) black tea liqueur with coffee, topped with a delicate foam cap made of Meiji Whipped Cream infused with orange purée. The light, refined texture of the foam gently envelops the tea and coffee base, creating a rich, multi-layered tasting experience.
Mixologist Kameyama’s Insights: "The texture of Meiji Gold Label 35% Whipped Cream is even lighter than standard Japanese commercial dairy creams. It is remarkably stable and does not easily separate when paired with citrus, allowing for a more complex and expressive flavor profile in the cocktail."
