Which side is the “front” of a Madeleine?

For presentation purposes,
most shops tend to display the shell-patterned side facing up,
which naturally leads us to think of it as the front.
But 泉光一 of ASTERISQUE shares that,
in the traditional understanding of this classic pastry
and in competition presentation,
the “belly” side is actually the more important one.
In fact, even which side you choose to display
can reveal how the maker understands the Madeleine.
After all these years of eating Madeleines,
it turns out we may have been looking at them
from the “wrong” side all along.
