　　It was in 1848 that Admiral Hamelin imported Vanilla Aromatica plants to Tahiti.

　　Two years later, Admiral Bonnard imported Vanilla Fragrans plants. The two species were skilfully crossed to obtain the most appreciated and most cultivated variety in Tahiti:

Vanilla X Tahitensis.

　　　　　

　　Tahitian vanilla is a unique variety that is found only in French Polynesia in the Society Islands (1% of world production).

　　　　

　　For Tahitian vanilla preparation is completely different from the Bourbon vanilla (99% of world production), because it must be harvested immature because of dehiscence of the fruit

(pod splits into two at 7 months of growth). In contrast Tahitian vanilla is indehiscent (do not split). It is the only in the world to have this feature.

　　　　

　　Planted according to the “looping” method in humus enriched with distinctive compost (ground coconut palm), the vines receive all the mineral elements essential to good growth.

It is harvested at full maturity in 10 months. Hence the pod which remained 3 months more on its vine, a clove of bourbon vanilla, is full of aromas. Only fruit which has reached full maturity

(dark brown color) is selected, which allows for late harvest when the flavours are at their peak. The beans are oily and fleshy. releases floral volatile notes and buttery with infinite delicacy.
