Demo Class – IZUMI KOICHI

We sincerely thank to IZUMI KIOCHI chef and the patronage from ANTONINO AFFRONTI director and Roots director. It also our pleasure to have Mr. Nakada and Mr. Nishioka who have bring us various kind of package.
The main desserts for this demonstration are Coconut Traveler Cake (ココテベール), Coffee Mascarpone Cake (マスカルポーネ カフェ), New Moon Meringue (トゥングル), Pistachio Cake with Berry (エメロウド), Tayberry Cake (ケイク タイベリー), Vanilla Financier (ビジタンディーヌ オ ミエル) and Les Miserables (ミゼラブル).
Thanks for everyone’s visiting today and yesterday. Each of you is our motivation to move on! Lastly, thanks to CHIO SHINE’s staff, because of them, the activity could finish successfully!

Note :
Why it is called Les Miserables？
This is a traditional dessert from Belgium. In former times, those families with low income did not have enough money to buy dairy products (milk, butter, cream…etc.) Thus, they would add water instead of dairy. Nowadays, this dessert have much almond powder on it, make it even more delicate.
Could be divided by only one cut and still remain the taste！
IZUMI KIOCHI chef said when he was a judge in dessert competition, his standards for evaluation is whether the dessert could be divided in only one cut and still remain its taste. It is the best situation for any dessert.
Thermometer is important, but experience is even more important!
IZUMI KIOCHI chef also mentioned that mant people have an over reliance on thermometer. However, if your thermometer is broken, your experience will be much more important! You need to check whether the chocolate is in a good situation or not by yourself!
